Vegan Pigs in a Blanket

When I first cooked the Pillsbury Crescent Rolls for yesterday's lunch, my mind immediately starting thinking about using them in their other most obvious use (to me anyway) and so the Vegan Pigs in a Blanket were born. I remember eating these as a child, and I always really liked them. In fact, I guess I've always enjoyed eating some version of this particular food item because I remember being quite fond of those Pretzel Dogs that they serve at those Auntie Anne's Pretzels places in the mall a couple of years ago before I stopped eating meat. And actually, now that I think about it, I have seen an entry in someone else's vegan blog where they made vegan Bagel Dogs. That would also be delicious. I don't remember exactly where I saw that, so if anyone knows right off the top of their head where it is, mention it in the comments because I think I would like to try that too.

Anyway, to make these, all I did was take some Light Life Smart Dogs and cut them in half and then wrap them with some Pillsbury Crescent Roll dough. And in case you missed yesterday's post, or didn't already know, YES Pillsbury Crescent Rolls are actually vegan. Weird, I know. Then I just baked them according to the directions there on the cardboard tube that the dough comes in. Is it just me, or does that packaging scare the daylights out of anyone else? I almost have a stroke everytime I have to press a spoon onto that cardboard just waiting for it to POP! Well, maybe it's not that bad, but I think there's just something diabolical about that packaging.

To finish filling the lunchbox, I brought along another salad of Organic Baby Greens. The little blue containers hold some Italian Dressing for my salad and some mustard to go along with my little "Pigs".

And for dessert, I brought the last remaining Peanut Butter & Chocolate Bar from what has to be like my 4th batch of these things. They're made using the recipe from La Dolce Vegan by Sarah Kramer. I swear I'm gonna' try something else, I swear I'm gonna' try something else, I swear I'm gonna' try something else. In fact, I've spotted a brownie recipe on one of my favorite vegan blogs that I would really like to try. I don't think I've got anything else at home to pack for dessert tomorrow, so perhaps I'll dive into that recipe tonight.

Well, I guess that just about does it for Tuesday. The Vegan Pigs in a Blanket are quite yummy and are a great way to remind you of when you were little. They're the perfect size for packing in the lunchbox too. Plus, cooking doesn't get much easier than slicing something in half and then wrapping some pre-made dough around it.

On a similar note, one of these days I would really like to try making a vegan corn dog. For some reason, I always really liked corn dogs. Then when I stopped eating meat, I was addicted to the Morningstar Farms Veggie Corn Dogs. But when I went vegan, then even those were out of the question. I tried making some once, but it was a disaster, but from some of the stuff that I have read since then, I think that my batter may have been too thick. Who knows? It would be nice to have something that you could wrap around the wieners so that you could bake them in the oven instead of having to dip them in batter and then deep fry them. Pillsbury also makes, or at least used to, some type of cornbread dough that comes rolled up in a tube like the Crescent Rolls. Something like that would probably work really well, although if I had to guess, I would bet that the cornbread dough product is not vegan. I'll have to check on that. Hey, maybe even Polenta would work? Hmmmm... I see a Saturday science project taking shape.

Okay, enough of that. It's lunchtime!

I agree with you about the Pillsbury thing- those suckers scare the daylights out of me! I've only bought them a few times though "cuz I don't really care for the taste. Funny you should have this lunch today- me 'n the kids were joking last night that we should try to veganize that thing every comedian seems to be making fun of lately- that Jimmy Dean sausage and pancake on a stick. If I try it, I'll let y'all know!

I am actually shocked that the cresent rolls are vegan. I have never bothered to pick them up as I assumed they would be laced in butter. I guess I need to be more curious when at the grocery store. I am an avid label reader but certain things I just assume are laced with animal products so I don't bother. Looks like I will be starting a new adventure :) Pilsbury here I come.

They sure do taste like they are full of butter, but I read online a long time ago that they were actually vegan. I also read the label just to make sure before I purchased them, and sure enough, they look vegan to me. If you discover any different let me know. I have been fooled before, but according to the ingredients, they are indeed vegan.

I did a quick search and found a recipe over at vegweb using crescent rolls in an idea I hadn't thought of yet: VEGAN HOT POCKETS! Mmmmmm.. Maybe some FYH Vegan Mozzarella (or some homemade cheesy sauce) and some Yves Vegan Pepperoni folded up into crescent roll dough. YUMMERS!

Oh, and I just noticed that I misspelled Pillsbury every single time in the posts during the last two days. Sorry. I went back and changed them all.

Oh tracy. That would be something good to veganize. I actually had one of those breakfast sandwiches years ago that was some sausage between two little pancakes with syrup on it. I am ashamed to say, but as gross as that is, I liked it. That would be easy to veganize. The stick version might be a little more challenging. Good luck!

i'm ashamed, okay not really, to say that we made soy dogs rolled in pancake batter and then made as normal. they were flippin' awesome. if only i could get the kids to like the sausage...

oh, and i forgot about the BEST THING EVER!!!! those cheesy sandwich makers that the retail stores sell? there are always some with the waffle makers at consignment stores. you can make ALL SORTS of hot pockety sandwiches with those. i might be overly excited, but they are SO MUCH FUN!!!!

Hi! I am an omnivore transitioning to veganism. Your lunchbox meals are so cute and inspirational. I don't pack a lunch any more because I am in college, but I miss it! I like to cook but am mostly still learning...the way your food is compartmentalized is very appealing to me on some level (weird, I know). I bought VwaV and have tried some stuff so far, with success. Your blog is giving me some great ideas too though! =)

Hmmmm... robiewan, I forgot about those things. That WOULD be good for making hot pocket type sammiches. I may have to get one. Any excuse to get a new piece of kitchen equipment.

WOW! Thanks emily. Congratulations on deciding to make the transition to veganism. It was websites like Vegan Lunch Box and Post Punk Kitchen that inspired me to finally make the switch. Browsing those sites eventually made it obvious to me that I could be vegan and still eat anything I wanted, just a vegan version. So it's cool to hear that my blog is helping others do the same. Definitely think about getting one of the lunchboxes from www.laptoplunches.com

It's fun packing your lunch, and a whole lot cheaper than eating out. Plus, anyone who happens to be sitting around you when you eat lunch will be extremely jealous. Muwahahahaha.

Jennifer at Vegan Lunchbox made some vegan corndogs for her little shmoo. She used cornbread batter and a twinkie pan. I tried it and sent them in my kids' lunch. The kids said that the cornbread was too crumbly. I think if you could find a sturdy cornbread recipe it would work.

This morning I made Jennifer's "Pop Hearts" (pie dough hearts with a jam filling). They were a big hit.

I think hot pockets would be sort of like calzone--not too hard to veganize (but I have to admit I've never had a hot pocket). I bet you could buy frozen bread dough (if you don't make yeast bread), roll it out and fill it.

I remember that post now that you mention it sallyt. I might have to locate a twinkie pan and try that. Maybe that cornbread that I've been making lately, with the ground flax seed added to help hold it together, would work good.

I haven't made these, but I remember being intrigued by them when I saw the recipe. (I must admit, I don't care much for corn dogs, but hubby loves them.)

Crazy Corn Dogs

By Mary Clifford, R.D.

(From Vegan Handbook by Debra Wasserman and Reed Mangels, Ph.D, R.D.)

Serves 8

Traditional corn dogs are not only bad for the pig's health, but ours, too. They're hot dogs that have been batter-dipped, then deep-fat fried. This version uses a cornmeal biscuit to approximate a cross between corn dogs and that other artery-clogging favorite, pigs-in-a-blanket.

1 cup yellow cornmeal
3/4 cup unsifted whole-wheat flour
1 Tablespoon baking powder
1/8 teaspoon salt
1/4 cup soft margarine
1/2 cup water
8 non-fat vegan hot dogs
Relish, sauerkraut, mustard, ketchup, onions (optional)

Heat oven to 350 degrees. Lightly oil a baking sheet.

In a medium-size bowl, stir together dry ingredients. With pastry cutter or two knives, cut in margarine until mixture resembles coarse crumbs. With wooden spoon, stir in water until mixture pulls away from side of bowl.

Turn dough out onto lightly floured board; gently press out to between 1/4-inch and 1/2-inch thickness. With biscuit cutter or drinking glass, cut 8 circles from dough, rerolling and cutting scraps until all dough is used. Slightly flatten each circle of dough. Wrap one circle around each "hot dog," leaving ends uncovered. Pinch dough to seal.

Bake corn "dogs" on oiled baking sheet about 20 minutes, or until dough is very lightly browned. Serve immediately with topping as desired.

Iron: 4 mg
Carbohydrate: 23 grams
Calcium: 128 mg
Sodium: 453 mg
Dietary fiber: 2 grams

are you sure the Crescent rolls are vegan?

They have "DATEM" in them which can come from either plant or animal sources. I haven't heard back from pillsbury yet. PETA lists the rolls as vegan, but PETA does not and has not checked trace ingredients.....

any help???

Oooooh, there's a "fast food" restaurant in Florida called Evos that has healthy vegan options for food on the go. They have a vegan corn dog that they call the "good dog" and I love it! Too bad I live up north now and there are no Evos'! If you're ever in FL look them up!

P.S. Thank you for the pigs in a blanket info, my husband will love that in his lunch!

its totally scary to open those thing! my friend used to work at a grocery store and he told me about this lady who was in the parking lot screaming and holding her head. she was yelling "my head exploaded!" turns out it was a pillsbury roll package that had popped.
